While it’s not a dining destination, the kitchen has stayed the course with healthful, locally sourced dining options. Organic beers and coffees, hip cocktails, and all-screw-cap wines—focusing on New World bottlings from Argentina, Australia, Chile, New Zealand, and South Africa—are part of the forward-thinking beverage lineup.

Setting and Atmosphere

On the first floor of the Contemporary just past the front desk, you walk into The Wave’s lounge, with the dining room to the left—the lounge is usually packed after 5 p.m., and it’s hard to snag a seat. The adjoining dining room has the feel of an upscale coffee shop, with wooden tables and white-linen napkins.

House Specialties

For breakfast, a generous buffet, organic Colombian press-pot coffee, mega-berry smoothie, multigrain French toast, and make-your-own muesli. For lunch, lump crab–Florida rock shrimp cakes, build-your-own Florida-raised beef burger. For dinner: grilled Colorado lamb chops, sustainable fish, potato gnocchi with braised short rib, vegetarian curry stew.
